    The most recent research being done on the Oenococcus

oeni pertains to the mapping of the O. oeni genome.

Quite honestly, it is far too complex for me to understand;

    Also in recent research, scientists have been looking into

the process of fermentation through the mannitol pathway

of O. oeni. Basically, the process of lactic fermentation in O.

oeni occurs through the phosphoketolase pathway. The

excess NAD(P)H from this process is reoxidised by fructose.
