Also in recent research, scientists have been looking into
the process of fermentation through the mannitol pathway
of O. oeni. Basically, the process of lactic fermentation in O.
oeni occurs through the phosphoketolase pathway. The
excess NAD(P)H from this process is reoxidised by fructose.
