Introduction to Oenococcus oeni

 

  Oenococcus oeni is a gram positive bacteria used

in the secondary fermentation of both red and white

wine. It was formerly known as Leuconostoc oeni,

until scientists refiled it into the Oenococcus famlily

in 1995. Oenococcus Oeni is a rod shaped bacteria

that sometimes, but not always, has flagella.  O. oeni

creates lactic acid as a result of carbohydrate fermentation

which helps in the fermentation of wine. It is not essential

that these bacteria have oxygen in their surroundings

which gives them the capability of surviving in different

habitats. The most known habitat that it occurs in is wine.
